Slow cooker Collard Greens Recipe

  • 2 lbs collard greens
  • 2 ham hocks, or one large ham bone with some ham still on it (can also use a smoked turkey leg)
  • 2 Tablespoons brown sugar
  • 4 cups chicken broth
  • 2 Tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Wash, de-stem, and chop greens (note: you can also buy greens pre-chopped in a 2 lb bag)
  2. Place greens in slow cooker. If you’re using a 6 quart slow cooker, you will probably find that they barely fit, and you really have to tamp them down to get the lid on. Don’t worry! They’ll shrink as they cook.
  3. Sprinkle brown sugar, vinegar, salt, and pepper over greens.
  4. Place ham hocks on top of greens.
  5. Pour chicken broth over greens.
  6. Place lids on pot, and cook on high for 4 hours, or low for 6-8 hours.
  7. When done, remove ham hocks and debone meat. Discard fat, bones, and gristle, and add pieces of ham meat back into the greens and stir together.
  8. Serve as desired.
