Scale
  • 1 lb ground beef
  • 1 yellow onion
  • 1 stalk of celery
  • 4 cloves, or 1 tablespoon garlic
  • 1 large sweet potato (2 cups, diced)
  • 1 15.9oz can diced tomatoes (I like petite diced)
  • 2 15.9oz. cans black beans
  • 2 cups beef broth
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toppings such as fresh cilantro, avocado, sour cream, tortilla chips, and shredded cheese

Instructions

  1. Start by dicing your onion and celery, and mincing your garlic. Then, peel and dice your sweet potato.
  2. Heat a large (at least 4 quart) pot over medium-high heat.
  3. Add ground beef, onion, and celery.
  4. Stir and crumble as the beef browns.
  5. When beef is done, or almost done, add garlic, and cook for another minute.
  6. Add sweet potato, tomatoes, black beans, beef broth, cumin, chili powder, paprika, oregano, salt, and pepper, and stir together.
  7. Reduce heat to medium, place a lid on the pot, and bring to a simmer.
  8. Simmer until sweet potatoes are fully tender.
  9. Remove from heat and serve with desired toppings.
  10. To make in a slow cooker, brown beef with vegetables, then transfer all ingredients to a crock pot, and cook on high for 4 hours, or low for 8.
