Melt peanut butter gently over low heat.
Add to a large bowl with honey, vanilla, and salt, and whisk together.
Add oatmeal and chocolate chips.
Stir together well.
Press into a parchment-lined 8×8 inch pan, and score into desired-sized bars with a sharp knife, as they will harden and be harder to cut as they chill.
Place in refrigerator for several hours until completely chilled.
Remove from pan, and cut completely.
Store in an airtight container in the refrigerator until ready to eat. These can be stored at room temperature, but I wouldn’t leave them out for for then a day or two.
