- 1 well-beaten egg
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 Tablespoons oil
- 1 cup homemade gluten-free flour mix, or a high quality mix like this one.
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups cranberries
- 1/4 cup granulated sugar for topping
- Combine egg, sugar, milk, and oil.
- Sift dry ingredients; add to egg mixture.
- Mix well.
- Coarsely chop cranberries and fold into batter
- Turn into greased 8×8 pan.
- Sprinkle sugar reserved for topping over cake.
- Bake at 375 for 25-30 minutes until lightly golden on the edges.
