- 1 cup flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ teaspoons espresso powder
- ½ cup butter, room tempurature
- ½ cup brown sugar
- ¼ cup white sugar
- ½ teaspoon vanilla extract
- 1 egg
- ½ cup toffee bits
- ½ cup white baking chips
- Preheat oven to 350º
- Combine flour, baking soda, salt, and espresso powder in a bowl and set aside
- Cream butter and sugars together in a large mixing bowl, or bowl of a stand mixer, until light and fluffy
- Add vanilla and egg and beat until combined
- Add dry ingredients and stir until combined
- Stir in toffee bits and white (or chocolate) chips
- Drop by tablespoon onto an ungreased (or parchment lined) baking sheet with at least 2 inches between each
- Bake for 10 minutes or until the edges are set and the centers no longer look wet
- Remove from oven and let cool on sheet for 5-10 minutes before transferring to a cooling grid
