Earl Grey Cookies

This light and delicious recipe featuring Earl Grey tea is destined to be your family’s new favorite cookie.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 Tablespoon finely blended Earl Grey tea (about three teabags worth)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Glaze (optional:

  • 1 teaspoon (about 1 teabag) Earl Grey tea
  • 3/4 cup powdered sugar
  • 2 Tablespoons milk
  • 1/4 teaspoon lavender extract or 10 drops lavender essential oil
  • Lavender buds (for garnish)

Instructions

  1. Preheat oven to 350º
  2. In a small bowl, combine flour, Earl Grey tea, baking soda, and salt, and mix together well. Set aside. 
  3. Combiner butter and granulated sugar in a larger mixing bowl and beat until light and fluffy
  4. Add egg and vanilla, and beat well
  5. Stir in dry ingredients until just combined
  6. Scoop by the tablespoon onto an ungreased or parchment paper-lined baking sheet
  7. Bake in the center of the oven for 10 minutes, until the edges are set but the centers are still soft. 
  8. Remove cookies from oven and let rest on pan for 5 minutes, then transfer to a wire rack to finish cooling
  9. While the cookies cool, combine icing ingredients except for lavender buds
  10. When cookies are cool, drizzle with icing and sprinkle with lavender buds
