Buttermilk Lemon Pie

This pie is a family favorite and full of unique flavor.

Ingredients

  • 1 9″ unbaked pie crust
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 2 Tablespoons all purpose flour
  • 1 1/3 cup buttermilk
  • 1/4 cup butter, melted (salted or unsalted butter is fine – I like salted)
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Instructions

  1. Preheat oven to 350ยบ
  2. whisk eggs and sugar together until light
  3. Whisk in flour until completely incorporated
  4. Whisk in butter, lemon juice, vanilla, and lemon extract until completely combined
  5. Pour into pie crust (tip: place pie plate with crust in it, on a rimed baking sheet to make it easier to put in and out of the oven)
  6. Bake in center of oven for 45 minutes, until golden brown
  7. remove from oven and let cool completely on a wire rack. Pie may jiggle while hot, but will set up as it cools
  8. For best results, let cool for several hours before serving
