This simple squash casserole recipe is just that – super simple, and it’s one of those wonderfully natural gluten-free recipes!

I made this last week for our church potluck, and it was a hit!

This delicious dish is a perfect side for vegan black bean burgers, or perfectly grilled steak. Delicious!

Super Simple Squash Casserole Recipe

Looking for a tasty recipe with your garden squash? Try this simple squash casserole.

  • Prep Time: 15 minutes
  • Cook Time: 20-30 minutes
  • Total Time: 35-45 minutes

Ingredients

Scale
  • 23 yellow squash or zucchini
  • 1 small onion
  • 1 cup pasta sauce
  • 12 cups shredded cheese (I use mozzarella)

Instructions

  1. Slice squash and onion into 1/8 inch rounds.
  2. Stir-fry in a bit of olive oil or butter. Or Steam until just tender.
  3. Spread into a two quart casserole dish.
  4. Pour pasta sauce over the top, and sprinkle with cheese.
  5. Bake at 350º for 20-30 minutes.
  6. Enjoy!
