No-Bake Apricot Cookies
These Apricot no-bake cookies are your perfect afternoon snack. It takes less than five minutes to make them!
I feel like maybe I have multiple personalities. I mean, some days, I make complicated food, and just love cooking – and if you’ve ever seen my home remedy cabinet, you know it doesn’t even stop with food.
But other times, the kids will be following me around asking for a snack, and I’m just like, if I have to spend more than five minutes in the kitchen, I ain’t doing it.
Okay, so most of the time I will do it, but only if there’s no other option. But you know what? There is another option. Almost always. Because you can never go wrong with a little bit of nut butter, honey, and dried fruit!
I learned this several years ago from a friend. We were living in Tennessee at the time, and they so sweetly traveled all the way from Texas to come spend a few days with us. Their four kids are (almost) as crazy as my two, so it was quite a circus. A FUN circus of course. 😉
And one of the travel snacks my friend brought with her was what they called “fudge babies”. A simple, but delicious mixture of peanut butter, honey, and coconut flour, rolled into little bite sized balls. They were so GOOD! A delicious, and super satisfying little treat.
So the other day, when the kids were asking for a snack, and I didn’t feel like cooking, I remembered those fudge babies and had an “aha!” moment. After all, I’m schizophrenic, not forgetful.
I changed the recipe a wee bit of course, but the main idea is still there, and still just as delicious and satisfying.
No-Bake Apricot Cookies

These apricot cookies are so tasty- any easy! This no-bake recipe lets you put them together quickly!
Ingredients
- 2 Tablespoons coconut flour
- 1/4 cup honey or maple syrup
- 1/2 cup peanut or almond butter
- 1/2 cup chopped dried apricots
Instructions
- Mix coconut flour, honey, and peanut butter together until well combined.
- Fold in Apricots.
- Shape into balls, or cookie shapes.
- Refrigerate until ready to eat.
- Enjoy!
- P.S. I used natural, unsweet peanut butter. If your peanut butter is sweetened, you may want to replace some of the honey with peanut butter. Just mix to taste!
