Loaded Baked Potato Wedges
Gabriel and I have been a little bit obsessed lately with loaded potatoes. We started with fries, which tend to be a bit labor-intensive, so now we’ve moved on to easier, better things.
Baked potato wedges.
It’s so much easier to slide a tray of potatoes into the oven and just let ‘em bake than to stand over the deep fryer to watch batch after batch brown. And did I mention less time intensive? That’s a huge plus too.
So much easier.
You gotta love an easy recipe that makes it look like you slaved away in the kitchen for hours. 😉
These are a perfect side to hamburgers or sloppy joes. Good stuff!
Loaded Baked Potato Wedges

Looking for an alternative to French Fries with your dinner? These loaded baked potato wedges are a real crowd pleaser.
- Prep Time: 15-20 minutes
- Cook Time: 30 – 45 minutes
- Total Time: 45 – 65 minutes
Ingredients
- 3 lbs of potatoes
- 2 Tablespoons olive oil
- 1 cup of shredded cheese
- 1/2 cup cooked, crumbled bacon
- 3 Tablespoons chopped green onions (or chives)
- Salt and pepper to taste
Instructions
- Preheat oven to 400º
- Wash and cut potatoes into wedges.
- Toss with olive oil, salt and pepper, and arrange on a cookie sheet, cut sides up.
- Place in oven and bake for 30 minutes, or until potatoes are tender.
- Remove from oven and sprinkle with cheese and bacon.
- Place back into oven for an additional 5-10 minutes until cheese begins to get toasty.
- Remove from oven onto serving tray.
- Sprinkle with chives and serve.
- Enjoy!
