Gluten Free Chocolate Mug Cake

I never cease to be amazed by Gluten-free recipes, and this one is no exception!

Sometimes life calls for chocolate, and when it does, it’s usually an I-need-it-right-now-but-don’t-want-to-make-an-entire-pan kind of thing.

That’s why God made coffee mugs (I’m pretty sure he didn’t intend for them to be used for actual coffee *gag*). And it’s one big reason why I keep a jar full of gluten-free cake mix in my pantry. Not THE reason, but a big one. You never know when a chocolate craving’s gonna hit.

This recipe is really allergy friendly because it contains no eggs, and you can substitute non-dairy milk where milk is called for. The amount needed may vary a tiny bit depending on what sort of milk you use, or how humid the day is, but it’s not really important. Just go for a cake batter consistency.

Gluten-Free Chocolate Mug Cake Recipe

If you’re looking for a quick bite to curb your sweet tooth, this chocolate mug cake is the perfect option.

Instructions

Mix ingredients together in a coffee mug, and microwave on high to 90-120 seconds. By the way, you can also use a bowl, in which case, it may not take quite as long to cook. Be careful! It’s really hot and steamy when you take it out!

This recipe gets bonus points from me because it’s eggless, and therefore is awesome for if you just want to eat cake batter. Not that you’d want to eat cake batter, I mean, we’re adults after all… I’m just sayin’.

  1. Looks yummy! I assume if I have chocolate cake mix, I don’t need the cocoa powder? Or is it best to use vanilla and then add the cocoa?

  2. DEFINITELY didn’t intend coffee mugs for actual coffee. In fact, I’m pretty sure He didn’t make coffee, either, right? I think that was a result of the Fall or something. 😉 But CHOCOLATE…yeah; He definitely made chocolate. This sounds yummy; thanks for posting!

    And chocolate is made from cocoa beans, and beans are vegetables, and aren’t we supposed to have 8 plus servings of veggies a day?? Hense the chocolate 🙂

  4. Do you have the recipe for a large mix to keep it on hand?
    Coffee ☕ is not ever in my cup..
    I always tell people I am not old enough to drink it.
