Gluten-Free Breadsticks Recipe

We love pizza. I mean, who doesn’t?

Seriously though, if you don’t like pizza, you may not want to come over to my house for dinner. Like ever. We have a fabulous gluten-free pizza recipe, and I ain’t afraid to use it.

Buuuuut, recently my son had dairy removed from his diet (hopefully temporarily), and what’s pizza without cheese?

Breadsticks, that’s what it is.

After all, even if you can’t have cheese, you’ve got to satisfy your pizza craving somehow.

So far, Garrett’s been remarkably cool about his new diet restrictions, but the reality of having a 5-year-old on a special diet is that for the most part, the entire family adheres to his diet. It’s just not fair, or kind to expect a pre-schooler to deal with watching everybody eat his favorite food (I wish it wasn’t true, but pretty much anything with dairy in it is his favorite food – especially cheese and ice-cream), knowing that he can’t have any.

So, on nights when I don’t want to think about what to make, I’ve started reverting to breadsticks and sauce rather than pizza.

The kids love dipping their sticks, and as long as we don’t try to frame breadsticks as a pizza replacement, they don’t seem to mind the difference.

Basically, you take the basic pizza crust recipe, top with a few herbs, cut it up and serve it with sauce. And it’s so yummy, nobody knows it’s gluten-free (I know I say that about recipes a lot, but it’s true!).

I call that a win, because I love a good hot breadstick. That’s not saying I’m not hoping this no dairy thing is only temporary though.

Gluten-Free Breadsticks Recipes

These delicious gluten-free breadsticks are so tasty, you won’t even know they’re gluten-free!

Ingredients

Scale
  • 2 cups gluten-free flour mix
  • 1 tablespoon granulated sugar
  • 2 teaspoons guar or xanthan gum
  • 1 tablespoon yeast
  • ½ teaspoon salt
  • 1 cup warm water
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons olive oil
  • Garlic Salt, italian seasoning, parmesan cheese (optional)
  • Sauce for dipping

Instructions

  1. Mix all dry ingredients together
  2. Add wet ingredients and mix well
  3. Beat on high speed for four minutes using the paddle attachment of a stand mixer (or a hand mixer, or by hand – just do what you can)
  4. Liberally grease an 8×10 inch baking dish with additional olive oil
  5. Scrape dough into center of pan, and use a rubber spatula to spread dough evenly over entire pan
  6. Tip: dip spatula in water to keep dough from sticking
  7. Sprinkle with garlic salt, Italian season (or oregano), and parmesan cheese (omit if dairy-free)
  8. Score dough with a butter knife to outline breadsticks
  9. Place pan in a warm area to rise for 35-40 minutes
  10. Preheat oven to 425º
  11. Bake about 10 minutes until set
  12. Remove from oven, and let rest for five minutes
  13. Cut along score lines with a pizza cutter or scissors
